Fried Minnows
VAIRONS FRITS
Catch some minnows with bottles when they come out
of a pure water stream or a fast-flowing river; press the
bellies between the thumb and index finger, and empty them
through the anus in one operation.
Wash them and dry them in a napkin.
Soak them in milk, roll them in flour and throw them into
a fry of boiling oil.
Salt; pepper with white pepper or paprika, or red cayenne
pepper; bless them with the juice of a lemon.
Lay the minnows on a dish wreathed with garden cress and
serve very hot.
